Our Nioka Estate Grown Angus Osso Bucco is made using hormone free Black Angus beef, available for pick up only.

Our cattle are grass fed before being finished over 120 days on a grain ration that includes nutrient-rich spent grain from the brewing and distilling process at Hope Estate. This finishing program supports improved marbling and produces beef with fuller flavour, better tenderness and more consistent eating quality.

Osso bucco is a traditional cut taken from the shin, featuring a cross-cut bone with marrow. Best suited to slow cooking methods such as braising, where the meat becomes tender and the marrow enriches the sauce.
